I am trying to figure out what could be the cause of my gti's engine trouble...It has been burning through coolant pretty quickly, when I start the engine it sticks around 2000 RPM for about 2 minutes then drops to normal but sputters.  When it starts, it also sounds like an airplane getting ready for take off.  The oil is thick and sludgy (if thats a word).  When I accelerate its sounds like there is a lot of air moving around under the hood.  Any suggestions?

All hoses are brand new and there are no leaks in them.  The oil has been changed regularly (synthetic).

Here is some background on the car though.  About a year ago, I drove over a manhole cover that for some reason was pressurized!  It shot up under the right front of the car, messed up the alignment, bent 2 rims, popped 2 tires, blew out all of my airbags, and sprayed poop, yes poop, all over the road.  My insurance company paid for it to be repaired and the repair shop said it was within $700 of being totalled.
I am leaning toward there being some sort of crack in something that has been letting dirt get into my oil, or maybe a damaged oil cooler/pump or something.

Don't rack your brain over it. Contact your insurance company. Inform them that you car is still having problems as a result of the incident. They should take care of it. If not, fight them on it.

I would agree with the above.  You can sit here and think of a ton of reasons why it's doing that.  All in all, contact your insurance company. 

And just for my two cents, you could possibly have a crack  with in your head or block walls that is allowing coolant to be burned off (maybe mixing with your oil).
